Have a Happy and Healthy New Year

Wishing you a Happy and Healthy New Year with a great recipe that I love to make this time of the year. I absolutely love a warming curry in the winter, and you can use up a lot of your leftover veggies and put them to good use. You can even add any leftover turkey. I hope you enjoy this curry as much as I do.

Mild Vegetable Curry with Dhal

Serves 4

Ingredients:

2 tbsp coconut oil

1 onion, chopped

1 tsp curry powder

2 cans coconut milk

1 head cauliflower, chopped

2 carrots, chopped

1 parsnip, chopped

Handful of spinach, chopped

1 cup sliced mushrooms

1 bunch of cilantro, stems removed and chopped

Heat the coconut oil in a large saucepan over medium heat. Add the onion and saute until softened, about 5 minutes. Add the curry powder and cook for 1 minute. Add the coconut milk and vegetables and simmer until the vegetables are tender. Remove from heat and serve with basmati rice and topped with the cilantro.
